I am a newcomer to this area....I am in Vancouver for 3 week. I have with me my own Galaxy SIII. I am here from Israel and don't want to use the outrageous costly service of Pelephone.
Do I have the opportunity to change something in the SIII so I can use it ? Or do I need to purchase a 'disposibe' unit with a local number? I'll also be in Montreal for a month. Shall I get a phone here for 3 weeks, then another one in Montreal? Or is it possible to use in both places? thanks for the patience

First of all, 7-Eleven is not available in Montreal. So if you are going to buy their sim card, do it in Vancouver. So, (and perhaps others can comment here) does this mean that when you get to Montreal, all local calls will be long distance?
Also, is your phone unlocked? If not, it won't accept the 7-Eleven sim. Otherwise, this is the cheapest way for a foreigner to set up a Canadian cell phone. But it will cost you $35 + tax. ($10 for sim plus $25 credit.)

If you are not going to be in Canada for long, I think a better option would be to get your SIM card from Petro Canada instead. Petro Canada is much like Speakout, except Petro Canada $25 vouchers expire after 90 days, whereas all Speakout vouchers last a year. You can find a Petro Canada pretty much anywhere in Canada.
If you are going to be in Vancouver for only 3 weeks, I would just rough it, and use available wifi hot spots for calls. I would download a free VOIP program called Dell Voice when you are in Canada . You can get a Vancouver or Montreal number with Dell voice, and call either city for free. Only catch is it uses wifi, your phone cannot do 3G here in Canada, just GSM.
