Hi,
I'm Rob from the Netherlands. I'm going to Canada for a short visit. Will drive from Toronto to Winnipeg (Man.) and I want to buy a prepaid cellphone once I'm in Toronto.
Can I use a prepaid phone from 7-Eleven and use it along the way and in Winnipeg as well?
Or are there any better alternatives?
Thanks for reading and answering.

Alternatives?
Yes. I recommend staying in Toronto and skipping Winnipeg.
No? Well then perhaps flying directly to Winnipeg (Canada is a lot bigger than the Netherlands, ya know!)
Oh, do you mean phone recommendations?
Well here is the coverage map for 7-11 Speakout. PetroCanada Mobility, Rogers, and Fido should be exactly the same, as they all share the same network.

As you can see, there is a big gap between Toronto and Winnipeg.
(Note: Since that is the only GSM network in Canada, that is also the coverage area for your European GSM phone as well)
The other two networks are Bell Canada and Telus
The companies that use the Bell Canada network are Bell, Bell Solo, Virgin Mobile, and President's Choice Mobility. To make matters more confusing, the President's Choice coverage on their webpage looks like it's missing a few areas.
Here's the Bell coverage

Both Telus and Koodo use the Telus network. Here is is.

It seems that Bell and Telus both have better coverage between Toronto and Winnipeg, so I'd pick one of them. Both Bell and Telus use CDMA phones, so you won't be able to use them in Europe after your trip.
So, check out their prepaid offerings from Bell and Telus and their related companies
Bell - Bell, Bell Solo, Virgin Mobile, President's Choice
Telus - Telus, Koodo
