I currently have an itouch and Nokia C3 phone and hate carrying both. My plan was to get an Iphone 4S (because the sim is bigger, because the connector will match my other devices, because its cheaper and is known to work) and cutting down my sim card to get the best of both worlds. I use my itouch exclusively, my phone sporadically. If I do this, will the iphone give me everything my itouch currently does, email thru wifi, apps etc plus phoning capabilities. Can I turn off the phone without affecting WIFI? Can someone give me detailed instructions on how to set one up, after installing the SIM

ipod touch is iphone without the phone(and some minor thing like the screen is not as good).
so yes, you get everything you want with an iphone BUT you cannot turn off the phone(I believe you mean the communication part) without turning off wifi. You can turn off the data part(which you don't have anyway unless you pay).

Actually you can turn off the phone (i.e no one can dial your number or SMS you) and still have wifi on. Here's the steps:
(1) Settings -> Airplane Mode -> ON
(2) Settings -> WiFi -> choose a network
You will see Speakout disappear. In place you will see the airplane and wifi symbol
WarrenC, I too went from a iPod Touch + Blackberry (phone only) to 1 single device. I am now using a Rogers Locked iPhone 4s that I got off Kijiji. Do a search and will find a bit of write up here and maybe redflagdeals.com on how others got Speakout SIM to work on the iphones.
