I have a sim unlocked Japanese Samsung Galaxy SIII which operates on some very unorthodox bands. I was wondering if that matters if I plan to use my smartphone for voice and wifi only (no data plan). Even if I did get a data plan, could my phone access older (though much slower) standards like 2G for less bandwidth intense tasks such as email?

Here are the bands my Docomo Samsung Galaxy SIII SGH-N064 (SC-06D) uses:

G2: 850, 900, 1800, 1900 MHz GSM / GPRS / EDGE
G3: 800, 1700 (Band IX), 2100 MHz UMTS / HSPA+
G4: 2100 MHz

The phone will probably work with Speakout. It will probably do 3G, because I was of the understanding Japan does not do GSM 2G, only 3G. If the phone is stuck with 2G, the data will be slow, no real difference in voice.
